Lentil Salad

Made this wonderful Lentil Salad for dinner last night. Had dinner with some friends and wanted something a little different.  This is great made ahead and served chilled. 

Recipe:  1 cup lentils, boil til tender.  While still warm add dressing: 2 Tbs White Wine Vinegar, 1 tsp. Dijon Mustard, 1/2 tsp. salt, 1/4 tsp pepper, 1/3 cup olive oil .  Whisk dressing ingredients together. Add to warm lentils.  Then add fresh parsley, green  and red onions, cherry tomatoes cut in half.  Then chill.  I think cucumber would also be good  although I haven't tried it.
