Chinese Chicken Salads is one of my favorite Summer Dinners.  You can make a simple or deluxe version.  I love to add water chestnuts and crushed ramen noodles to my deluxe version.

Cupcakes for Easter.!

Okay...so it was Easter and I cheated.  But the lemon glaze cupcakes with Razberry Cream Cheese Frosting were totally worth it.  The Chocolate Sour Cream Cherry Cupcakes with Almond Cream Cheese Frosting were gone before I could take a picture.

Monday, I'll just continue with the Visalus Shake program.!!! Yum..

Lentil Salad

Made this wonderful Lentil Salad for dinner last night. Had dinner with some friends and wanted something a little different.  This is great made ahead and served chilled. 

Recipe:  1 cup lentils, boil til tender.  While still warm add dressing: 2 Tbs White Wine Vinegar, 1 tsp. Dijon Mustard, 1/2 tsp. salt, 1/4 tsp pepper, 1/3 cup olive oil .  Whisk dressing ingredients together. Add to warm lentils.  Then add fresh parsley, green  and red onions, cherry tomatoes cut in half.  Then chill.  I think cucumber would also be good  although I haven't tried it.

Tabouli Salad

Been craving this for a week.  Finally made it for Sunday Dinner side dish.  It was a little tricky finding tomatoes that would not disappoint. 

Dinner was Steak, Tabouli and Asparagas.  It was truely wonderful.

Still making progress on my weight loss.  I am much more successful if I remember to drink two glasses of water during the day in addition to my 2 shakes a day.

Taboui recipe:    1 cup Tabouli mixture from Health Food Store
                           1/4 cup hot water
                           2 Tbs.  Olive oil
                           Tomatoes, Cilantro, Cucumber, green onions, optional Avacado

So Simple

This weight loss program is so simple.  It is 2 shakes a day, snacks if you need them, and if it doesn't work for you, the money is refundable...No risk....

So, here's what I don't get...told a friend 3 months ago about Visalus.  She tasted and loved the shakes.  1 week later she told me she went on weightwatchers.  Asked her 2 months later how she was doing and she said it was too hard for her personal lifestyle.   In the meantime...I was 12 pounds lighter...  she still hasn't tried the Visalus program.

Salads and personal preference

Last night we had a beautiful snowstorm.  It is almost Spring here, probably one of if not the last snowstorm of the winter, so it makes appreciating the snow that much easier. I am planning on having a belated St. Patrick's Day Dinner tonight...Corn Beef, cabbage, potatoes, carrots, and probably some green cupcakes. That means I need to be really good today and stick to my shakes.  I'm planning ahead for tomorrow's dinner and think this salad looks good.  I will probably omit the chips, and tomatoes since they are out of season and have half the portion shown on this picture, but this is looking good to me.

Grilled Pork Chop

Knowing your own body and how it responds to different food types is key to losing weight.  I find that bread is not my friend. I can have 1 slice of bread a day and still be fine.

This is another of my favorite recipes.. I take a medium size Pork Chop, rub it with various dry herbs and enough olive oil to make the herbs stick to the meat, then simple grill it. With 2 types of vegetables, it makes a wonderful meal.

Fruit and Fiber

Whenever I hit a wall in my weight loss journey I try to add more fruit to my diet.  Anything that ends in berry is particularly rich in Fiber. 

I pulled these images off of Bing images, some really impressive ways to serve this wonderful fruit in a party atmosphere.
I also try to add berries to my Visalus Shakes whenever I can.  Strawberries are really wonderful here in Utah right now.  I am sure we get them from California.

Grilled Shrimp with Red Pepper Flakes

I really prefer the taste of grilled foods whenever it is possible.  There is something about grilling that adds a taste of it's own.

Lately I have have used a marinade with lemon juice, olive oil, parsley and some red pepper flakes.  Hot off the grill, serve with a simple salad.

If you choose to serve with a Cocktail Sauce go easy since that is where you pick up your calories.

Vegetable Omelet

Tonight I am thinking of an Omelet with lots of Vegetables after having my 2 Visalus shakes today.  . As I have been on my weight loss journey I have tried to be very conscious of adding/including Fiber in my diet and not using processed foods.  Onions and peppers add a lot of taste to the omelet and I like to use Swiss Cheese whenever I can.

Strawberry Shake for Dinner

Today I had a craving for an Egg Salad Sandwich for Lunch.  On the Visalus Weight loss program, you take 2 shakes a day, so that meant dinner was Shake time.....

When I have a shake for dinner I like to make it a litte more substantial than my Breakfast shake.  So tonight was fresh Strawberry Shake time.  I'm not sure where we get the Strawberries from this time of year, but they are wonderful at Costco right now. 

We have websites with over 100 Shake recipes.  I generally don't get too creative...usually one maybe two different types of fruit.  I did try chocolate with Peanut Butter once...it was good but I really don't want to be adding too many calories to my low calorie shake.

Citrus Salsa and Grilled Chicken

This is a crowd please recipe.  I believe it is a variation of a Martha Stewart recipe.  I marinate the chicken in lime juice and olive oil.  Then grill it.  The Citrus Salsa is a mixture of Grapefruit, oranges, cilantro, cherry tomatoes without the seeds and a jalapeno pepper. Finish with lime juice.  I have served this for years and it is always a hit. I just serve it with a green salad.

Healthy Salmon Recipe

As you all know, I decided in August to get serious about losing weight.  I have one of those decade Birthdays coming up and I am DETERMINED to lose weight.  30 pounds so far..

As part of that program I have 2 shakes a day, usually for breakfast and lunch, then a reasonable meal for dinner.  This is one of my favorites....Baked Salmon with Dill and Lemon.



Recipe........
Place 3-5oz Salmon on tin foil on Cookie Sheet.  Sprinkle with Fresh or dried Dill.  Dot with butter.. Bake at 350 for 20 to 22 minutes.  Serve with fresh lemons to squeeze on top.  I either have this with two green vegetables and a roll....or 1 vegetable and a starch.
